Serves: 2
1 C shrimp (large, peeled, deveined, fresh or frozen-defrost ahead of time if frozen)
1 C organic red quinoa
2 wheat tortillas (optional)
1 organic avocado, diced
1/2 C organic red onion, diced
1/4-1/2 C organic plain yogurt (depending how creamy you want the wrap to be)
1/4 C organic garlic hummus
2 T organic extra virgin olive oil
Couples pinches of sea salt
1. Add quinoa to a medium size saucepan, bring to boil
2. While quinoa is heating up, saute shrimp in a medium size skillet with olive oil
3. Drain water from quinoa and fluff with fork
4. Add quinoa, shrimp, avocado, and onion to a medium size bowl, mix together
5. Fold yogurt, hummus and salt into mixture
6. (optional) Wrap inside warm wheat tortillas
Top Sirloin with Mango Salsa, Garlic Veggies & Wild Rice
Serves 2
1 1/2 lb. organic grass-fed beef top sirloin
1 C wild rice (or brown)
1 organic mango (or nectarine or peach), diced
1 small organic red onion, diced
1 organic avocado, diced
1 C organic red cabbage, very thinly sliced
1 C organic spinach
4 T organic extra virgin olive oil
organic garlic powder
sea salt
1. Heat up top sirloin in covered skillet with 2 T olive oil over medium-low heat.
2. Meanwhile, add wild rice to water in a medium size saucepan, follow directions to cook
3. While rice & meat cook, add cabbage and spinach to a small saucepan with remaining 2 T olive oil, sprinkle with garlic powder and sea salt to taste, cook over medium-low heat
4. Mix mango, onion and avocado in a small bowl, set aside
5. When outside of meat is cooked, remove from skillet and cut into slices, return to pan and turn heat up to medium (depending how well done you like your meat)
6. Once rice is cooked, fluff with fork
7. Once meat is done, serve with rice, veggies, and mango salsa
The "Best Pasta" Recipe
(designated the "best pasta" by my boyfriend- let's see if you agree..)
Serves 2
8-10 oz. (about 1/2- lb) organic brown rice spaghetti pasta noodles-Trader Joe’s has the best I’ve tasted
½ lb or so organic grass fed lean ground beef-I don’t use a lot, it really depends on your preference
About 5-6 handfuls uncooked organic spinach-be generous as it will really cook down
½ C organic red onion, diced
1-2 T organic butter, unsalted-more or less depending how healthy you want the recipe to be in terms of saturated fat
2 T organic extra virgin olive oil
organic garlic powder
1. Bring water to a boil in a large pot
2. Meanwhile,begin to cook ground beef in a skillet on medium heat with olive oil
3. While meat is warming up, break brown rice noodles in half and add to boiling water in large pot, cook for 7-10 minutes or until al dente. Do not overcook (they will get sticky and mushy)
4. Wash spinach and put in a medium pot over low heat with sea salt, and gartlic powder, cover & stir occasionaly
5. Sprinkle beef with a bit of sea salt and garlic powder as it cooks
6. Once noodles are cooked, drain and return to large pot
7. Add cooked ground beef, cooked spinach, red onion & butter to the large pot, stir
8. Add sea salt and garlic powder to taste and enjoy
